Vegan Coquito Recipe from Puerto Rico

Ingredients
  

  • 1 15 oz can of coconut cream
  • 1 12 oz can evaporated coconut milk
  • 1 11.3 oz can of sweetened condensed coconut milk*
  • 1 cup white rum optional
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon

Instructions
 

  • Add all the ingredients to a blender and blend at a high speed until completely combined (about 1-2 minutes).
  • Refrigerate at least 1 hour before serving.
  • Sprinkle some ground cinnamon or garnish with a cinnamon stick, if desired. You can also pour it into decorative bottles to give as gifts. ¡Salud!

Notes

*To make your own coconut condensed milk: Combine 1 can (13.5 oz) coconut milk and 1/4 cup of sugar in a small heavy bottomed saucepan under medium high heat. Once it reaches a rapid boil, reduce heat to medium, and continue cooking for 45-50 minutes, or until mixture is thick and caramelized. Cool before mixing with the rest of the coquito ingredients. Can be stored in an airtight container in the refrigerator.
