Easy cowboy soup
Also known as hamburger soup, this filling dish is typically made with ground beef, tomatoes, potatoes, mixed vegetables, corn and green beans. I wanted to try a plant-based version to see if it worked, and it totally did!
This cowboy soup is hearty, savory, filling ang comforting. And it’s so easy to make. Since it uses meatless “meat”, there’s no need to cook it before hand.
Everything goes in the slow cooker, making it a wonderful dump meal. It also works great for meal prepping and planning. Just add all the ingredients (except the broth) to a large Ziploc bag and freeze until needed. Then, it’s just a matter of dumping it into the slow cooker, adding the broth, pressing the on button and done!

Ingredients for Hearty Crockpot Cowboy Soup

- Meatless meat crumbles
- Potatoes
- Mixed vegetables (I used frozen because canned vegetables tend to turn mushy in the slow cooker)
- Canned tomatoes
- Condensed tomato soup
- Vegetable broth (I used vegan bouillon powder mixed with water, but you can use ready made broth as well) + 1 broth bouillon cube (for extra flavor)
- Garlic
- Sugar
- Salt/Pepper
How to make Hearty Crockpot Cowboy Soup



First, start by peeling the potatoes and chopping them. Place them in the crockpot.
Next, add the tomatoes, condensed soup, broth, bouillon cube, garlic, sugar, salt and pepper. Combine well.
Add the meatless veggie crumbles and frozen mixed vegetables to the crockpot and combine well. Cover, and cook on LOW for 6 hours. FYI, your house will smell amazing while it’s cooking!
Once it’s ready, check flavor and adjust seasoning if desired. Serve with crusty bread or even by itself!

Ingredients
- 1 12 oz bag of meatless "ground beef"
- 1 16 oz bag of frozen mixed vegetables
- 4 large potatoes, chopped
- 1 can petite diced tomatoes
- 1 can condensed tomato soup
- 2 cups vegetable broth
- 1 cube vegetable broth bouillon
- 4 cloves garlic, minced
- 1 tbsp sugar
- salt and pepper to taste
Instructions
- Peel potatoes and cut into small cubes. Add to slow cooker.
- Add meatless crumbles, frozen vegetables, garlic, diced tomatoes, condensed tomato soup, vegetable broth, bouillon cube, salt, pepper and sugar to the slow cooker and combine well.
- Cook on low for 6 hours in slow cooker. Serve with crusty bread, pasta or rice.
